Bacca Seasonal Discovery Menu Launch
At Voyager’s Restaurant, Galician Head Chef Santi Fernandez channels his fervour for Margaret River’s coastal climate and bountiful seasonal, sustainable ingredients to craft what he calls ‘food du terroir’ – food of place. The signature Discovery experience unfolds over seven courses, with each course inspired by one of our organically farmed wines.
Santi’s new menu is entitled BACCA (Latin [Bak-uh] Berry). “As we approach harvest the berries change colour and the team gears up to hand-pick, crush and ferment the beautifully ripe fruit in the winery. Our BACCA Menu mirrors the vibrant colours of the vineyard, using fresh fruits and summer berries, as well as pristine local produce from the ocean and paddock. Our sustainable food philosophy is front of mind, heroing food of place and the wines that inspired these dishes.” – Santi Fernandez
