Ember Restaurant, Hotel 1929
Ember is a chic new restaurant that serves inventive and
modern European cuisine with a tinge of Asian and Japanese
influence. Its décor is a successful fusion of modern, clean
lines and interesting designer furniture. Its clever blend of
heavy wood tone flooring varies over a series of levels from the
entrance, dining room and kitchen. The dining room is decked
out with reproduction ‘Z’ chairs in cream and dark wood and
vintage Louis Poulsen lamps “rescued” from the former Danish
parliament building. The subtle mellow light tones and the
careful use of direct but controlled illumination on dining
tables enhance the visual impact of each dining experience.
The man behind the kitchen and Ember’s dining concept is
Chef Sebastian Ng, whose honed culinary skills bring joy to the
table. He has a fastidious nature when it comes to finding the
perfect ingredient for the perfect dish. Sebastian’s signature
focus on pasta, game meats and seafood continues at Ember.
To complement the meal, a specially-selected international
wine list is at hand, which includes Voyager Estate wines.
The Ember Restaurant is located inside Hotel 1929 and is

a 5-minute taxi ride from the heart of the business district. For

The Moomba Restaurant
The Moomba Restaurant is an award-winning fine dining
establishment that offers uplifting and contemporary
Australian-inspired cuisine. Its name is derived from a
40,000-year-old Aboriginal word which means “Let’s get
together!” Decorated with vibrant Aboriginal motifs and
paintings, it is set in a warm and cosy two-storey dining space.
Serving up quality Australian cuisine for the past thirteen
years, the restaurant only uses the best of seasonal produce,
most of it imported from Australia. The innovative cuisine can
be described as having “flavours that are complex yet simple”.
Savvy use of ingredients such as herbs and infused oils, add
depth to the Moomba signature dishes, such as barbeque
kangaroo loin with white truffle-infused apple-soya glaze,
sautéed sugar peas, mushrooms and wasabi potato mash. The
restaurant also offers an extensive wine list to complement
the menu and has a large selection of Australian wines for
sale in the wine shop upstairs. The chef’s talent for melding
flavours together, without changing the innate texture of the
ingredients, is definitely one of the reasons why Moomba
is a firm favourite for locals and visitors alike: a little bit of
Australia with some Singapore swing.
